What's in this aloo paratha
This record is the label of a frozen aloo paratha made by Haldiram's: 45% potato and 38% whole-wheat flour, with refined sunflower oil, coriander leaves, ginger, green chilli and spices including cumin, dried mango and kasuri methi.
Per 100 g it also has 3 g of fiber.
What changes the number at home
- Per 100 g it's lighter than a plain paratha (326 kcal), because potato has fewer calories than dough. But a stuffed paratha weighs more: USDA's 70 g plain paratha is 228 kcal, about the same as this 100 g aloo paratha.
- The label's paratha already has sunflower oil in it. At home, the ghee on the tawa and the butter on top are the big swing. Each teaspoon of ghee adds about 41 kcal.
- Homemade parathas vary a lot in size and filling. The 150 g row shows a large one.
Making aloo paratha a steadier meal
- One aloo paratha has 37 g of carbs and 3 g of fiber: potato and wheat are both starchy. A small bowl of dal (150 g) alongside adds 11.3 g of fiber and 12.9 g of protein. Fiber slows how fast a meal raises blood sugar,1 and trials that added lentils and other pulses to people's diets improved blood-sugar control.2
- Curd is the classic partner and adds protein: 5.7 g in a 150 g bowl.
- Eat the curd and a salad or sabzi first and the paratha after. In a small study of adults with type 2 diabetes, eating a meal's vegetables and protein before its carbs led to a lower blood-sugar rise than eating the carbs first.3
- Have one paratha with a bowl of sabzi rather than two parathas. The second one doubles the carbs to 74 g.
- Take a short walk afterwards. In trials, breaking up sitting with short, light walks lowered blood sugar after meals compared with staying seated.4
